Summer Portobello Burgers!
Portobello Mushroom Burgers Recipe
The perfect burger-less meal! I have even tested this on full meat eaters and they have given me double thumbs up. It's so filling, juicy, and good for you. A great side for these burgers is sweet potatoe fries!!! This recipie is per portobello burger**
Portobello Mushroom Burgers Ingredients:
Whole Wheat hamburger buns
1 Portobello Mushroom
1/2 Tsp of olive oil
1/2 Tsp of balsamic dressing
1/2 avocado
1/2 of an onion
Handful of greens
Dash of turmeric
2 slices of tomatoes
Handful of cilantro
1/2 tsp of minced garlic
1/4 tsp of minced ginger
Pinch of pink salt and pepper
Optional sides:
Ketchup
Dijon Mustard
Sweet potato fries:
2 sweet potatoes
1 tbsp of olive or coconut oil
1/4 tsp of chili powder
Dash of cayenne
Pink salt and pepper
Portobello Mushroom Burgers Directions:
Heat ovens to 380
Cut sweet potato fries into wedges and put on a baking sheet, drizzle olive or coconut oil over the fries and sprinkle with pink salt and pepper, dash of cayenne, and chili powder. Place into oven. Let fries bake about 40-50 minutes flipping them half way. Fries should be done when they began to turn golden and have a crispy texture.
Prep portobello mushroom by discarding the stem and facing it up on a baking pan. (Inside facing up) Drizzle olive oil, balsamic, on portobellos, add minced garlic and ginger. Sprinkle a dash of turmeric, pink salt and pepper. In the middle of the fries baking (about 25 minutes in) place portobellos in the oven.
Bake for 20-25 minutes - Checking with a fork halfway. They should have a soft like texture when ready.
Prep toppings:
Slice avocado, chop cilantro and greens, and tomatoes to top on burger.
Once all items are done place the burger on your bun with toppings and sweet potatoes on the side and there you go!!!!
