Vegan Lemon Blueberry Loaf

This loaf is such a great treat. It has the zest of meyer lemon but the sweetness of blueberries. I crave it most on rainy weekends when I am looking for something to bake :)

Vegan Blueberry Lemon Loaf:


  • 2 1/3 cup of all purpose flour - I used einkorn 

  • 3/4 cup of sugar

  • 1 zested lemon - about 1tbsp

  • 1tbsp of baking powder

  • Pinch of salt

  • 3/4 cup of milk - I used almond 

  • 1/2 cup of neutral oil- I used olive and avocado mixed

  • 1 tsp of vanilla extract 

  • 1 1/2 cups of fresh blueberries - save a few for topping 




Vegan Blueberry Lemon Loaf Directions:

  • Heat the oven to 350 degrees F

  • Line or grease a loaf pan or baking dish 

  • Mix all the dry ingredients together in a mixing bowl: flour, sugar, lemon zest, baking powder, and salt

  • Once mixed, add the wet ingredients to the same bowl: milk, oil, and vanilla.

  • Once all combined, fold in the blueberries

  • Transfer the mixture to the loaf pan and smooth out the top with the spatula

  • Top with remaining blueberries 

  • Bake in the oven for 50-60 minutes until a toothpick comes out clean

  • Let cool and then slice and enjoy!
